SWEET AND SPICY ROASTED SWEET POTATOES
Ingredients:
1 tablespoon sea salt
1 teaspoon black pepper
2 tablespoons brown sugar
1 tablespoon chili powder
1 tablespoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon onion powder
3 large orange skinned sweet potatoes cut into ½ inch thick cubes
3 Tablespoons extra virgin olive oil
Directions:
Make sure you pick out the sweet potatoes that are orange colored. Peel them and cut them into ½ inch thick cubes. Set aside.
In a large glass mixing bowl combine the first seven spices and mix well. Add the 3 tablespoons of extra virgin olive oil to the spices and mix again. Dredge the potatoes through this mix coating each cube as well as you can. Place all on a large baking sheet. Preheat oven to 425 degrees and bake for 15 minutes; turn and then bake 15 more minutes.
GIFT IDEAS
(I’m going to mix up large batches of these spices and put them into decorative containers wrapped in ribbons with pretty little labels and give them away, along with a copy of this recipe. I’m going to label the spice bottle “sweet and spicy potato spice.”
I might even scrub some nice-sized sweet potatoes and put them into a pretty little basket and include several bottles of the spice mix in the basket with a copy of this recipe)
